Going vegan or vegetarian is one of the biggest food trends in 2018 according to Forbes. Plant-based food will grow and if you are thinking of being part of the food industry make sure you consider plant-based food in your startup. Cheese, eggs, sausages and meat are now produced plant-based, so you don't have to miss anything regarding taste (we are not sure we believe it). Not only Plant-based fast food is on the increase. As well as McDonald’s rolling out a vegan burger in its stores in Denmark, Sweden and Finland, in the future, we will see the rise of vegan and vegetarian chains producing fast food. So perhaps you should ask - why do people become a vegan or vegetarian? Religious or other beliefs and health issues are among the most common reasons for choosing a plant-based diet. Many people choose a green diet out of concern over animal rights or the environment. Bulgur salad with citrus fruits, avocado and birch dressing

To 4

200 g bulgur

2 red grapefruit

1 orange

4 ripe avocado

100 g roasted hazelnuts

pickled lemon 


4 tablespoons olive oil

1 tablespoon dijon mustard

1 tablespoon white honey vinegar

2 teaspoons of birch


Cover the bulgur with 4 dl of boiling water and set it aside for half an hour. Move the peel from grape and orange and cut both into thin slices. Chop nuts roughly. Cut the pickled lemon peel into small squares. Mix with the bulgur. Arrange the bulgur together with orange and grape slices, avocado and nuts. Whip the ingredients for the dressing together - always combine mustard with oil before adding vinegar, then the dressing does not divide - pour over the dish. You can ad some fresh herbs if you prefer.
